Picky Eater: Pumpkin Pancakes

Here's another sneaky recipe for picky eaters. This one is for pumpkin pancakes. According to wikipedia, pumpkin is botanically a fruit, referring to a plant part which grows from a flower; however, it is widely regarded as a vegetable in culinary terms, referring to how it is eaten.

1/2 cup canned 100% pure pumpkin
2 large eggs
2 tablespoons canola oil
1 cup milk
2 cups all purpose baking mix (Jiffy or Bisquick)
1 teaspoon pumpkin pie spice

1. In a bowl, mix together the baking mix, sugar and pumpkin pie spice.
2. In another bowl, mix together the pumpkin, eggs, oil and milk.
3. Add flour mixture all at once. Stir just until blended.
4. Coat a griddle/skillet with a spray of canola oil. Pour 1/4 cup batter for each pancake.
5. Over medium high heat, cook pancakes until golden brown, turning to cook second sides when pancakes have a bubbly surfaces and slightly dry edges.

*On our forum, shedrick suggests adding wheat germ to anything with flour or baking mix such as cookies, pancakes or muffins, since it's an excellent source of vitamin E and folic acid.

Yield: 10 pancakes.

Just wanted to throw it out there that Aunt Jemima came out with a "whole wheat blend" pancake mix. I have tried it with my family, especially my husband, and it is not too bad. There is a recipe on the side for muffins!!!!!!!!

One more thing. I've been cutting the pancakes into little 2-3" circles for Jack. He seems to like that a lot more too. I don't have cutting shapes, so I just push a small container down on the pancake to cut the circle. I eat the leftovers.

I was going to suggest cookie cutters for picky eaters. We use them all the time, especially for sandwiches.

I made the pancakes and my kids loved them!! But as I was reading your instructions it says mix the baking mix, sugar and spice together but doesnt have sugar listed in the ingredients above? Either way it tasted great to us!

I spent one hour making these pancakes, got up early, trying to be a better Mom. The recipe is messed up. They were terrible! It mentions sugar, but never says how much sugar to add. I put in 1 tsp of brown sugar & 1 tsp of regular sugar & then followed the rest of it - but they had no taste at all. None of my kids ate them, not even my husband! So much for picky eaters. Now everyone is late for school with no breakfast & I feel like more of a failure. Thanks!
